Fresh Spinach Minestra Soup
Ingredients
- 6 cups pork stock (broth) or chicken broth
- 1.5 lbs fresh spinach2 inside stalks of celery chopped3 medium potatoes diced
- 1 large onion chopped
- 8 oz. cooked Italian (Roman) green beans fresh or canned
- 1½ lb pork strips (any cut) or chicken
- 4 tablespoons olive oil
- ¼ teaspoon parsley
- ¼ teaspoon garlic salt
- Salt and Pepper as needed
Directions
In a large pot sauté onion, potatoes, in oil for 15 minutes. Add broth and meat. Cook covered for 20 minutes. Add celery
Add 1 cup of boiling water or more if needed, cooked green beans, spinach and seasoning items. Simmer for 5 to 10 minutes.
Substitutes for Spinach – Chard, Kale or Savoy Cabbage. With substitutes add with celery and cook for additional 15 minutes.
Option – Add a pasta noodle and serve toped with Parmesan or Romano cheese.
